Observed dishes being washed in 3 compartment sink and QUAT sanitizer in third compartment, wares were only being submerged in sanitizer for about 5 seconds before being rinsed and set to dry. Instructed employee to sanitizer wares for at least 30 seconds and letting air dry after. Please ensure QUAT sanitizers are allowed a minimum of 30 seconds contact time for effective sanitizing.
