Inspector's notes

Observed high-temp mechanical dishwasher with a maximum temperature reading of 156.2'F via min/max thermometer. Discussed routine maintenance with PIC. Establishment will discontinue use of mechanical dishwasher until repairs are made, PIC set up 3-comp sink to handle warewashing activities at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection.

Arrived on-site on 04/03/24 for routine inspection at 11:50 AM but establishment was closed down for operations. Inspector managed to get in contact with PIC on-site. Operations manager stated cafeteria was inaccessible at time of inspection as it was locked. PIC stated regular operations will resume on Monday. Routine inspection scheduled on 04/08/2024 at 9:00 AM.
