At in use bar warewashing machine, no detectable chlorine sanitizer at dishware surfaces. After several attempts to prime machine, unable to attain proper sanitizer concentration. Discontinue use of warewashing machine and use available 3-compartment sink for all warewashing purposes until machine is repaired. Chemical company was called at time of inspection. Discussed more frequent monitoring of sanitizer solution, especially at start of day, when exchanging bottles of solution, or after periods of inactivity. Corrective Action: Corrected at time of inspection.

On cook line, in top portion of prep table cooler nearest wall, TCS foods (shredded cheeses, salsa, cut leafy greens) with internal temperatures of 48*F-50*F. Per manager, TCS foods were placed in prep table cooler <4 hours. Containers of shredded cheese, salsa, and cut leafy greens were moved to walk in cooler to rapidly cool back down to the proper temperature. Discussed ensuring the unit is below 41*F or less when food is added at start of service. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

Maintain hot TCS food at or above 135F. It was determined that after the queso had been reheated on the griddle, it was placed in the steam bath that was not up to proper holding temperature. The queso was within safe time parameters, was returned to the griddle to be reheated, and the thermostat adjusted higher on the steam bath. Train staff as needed.
