Observed bags of chicken being thawed in a sink basin of still water. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Person in charge (PIC) emptied basin and bags of chicken in a bus tub to thaw submerged under cold running water. Corrective Action: Corrected at time of inspection.

Observed cans of cheese sauce, condensed milk, and chicken broth stored directly on the floor in an exterior cabinet by the back room bar. Discussed proper food storage with PIC. Food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. PIC relocated all food products to a nearby shelf at time of inspection. Corrective Action: Corrected at time of inspection.
