Inspector's notes
Observed a cold holding table with TCS foods inside in plastic deli bags. TCS food items included: cut leafy greens, cut cheeses, whole cheeses, cut deli meats, and roast beef. TCS foods were temped with internal probe thermometer, internal temperatures ranged from 43*F-46*F. PIC stated all food had been in the table for over 24hrs and temperature checks of the food had not been performed. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrected at time of inspection.
