Inspector's notes

Observed a large hole (1ft x 1ft) directly above the drying rack connected to the 3-comp sink at time of inspection, rendering the area neither smooth, nor easily cleanable. Per PIC, this occurred due to rainfall during a recent monsoon. Discussed the importance of repairing the ceiling so that it is smooth and easily cleanable and to prevent pest harborage conditions. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

New equipment must be provided, or establishment must discontinue use of current equipment before the next routine inspection.
