Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. An employee stated the cheeses had been out for approximately 1 hour. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Milk with internal temperature between 52-58*F (52*F on bag surface inside cooler, 58*F internally in a poured cup) found in cooler below the espresso machine. Temperatures verified by PIC's and inspector's calibrated probe thermometers. The ambient temperature of the cooler was 49-50*F. PIC stated the cooler was last checked around 5:00 AM today and was at 39*F. The milk had been in the cooler since yesterday. PIC discarded the milk. Whipped cream also in the cooler found with internal temperature of 46*F. PIC stated the whipped cream had just been placed in the cooler less than 1 hour ago and moved it to another nearby cooler for cooling and continued cold holding. The cooler below the espresso machine will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternate nearby coolers are available to continue normal operations. Please ensure cold held TCS food items are maintained at 41*F or below. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Sliced cheese, sliced tomatoes, and shredded lettuce in prep cooler found with internal temperatures of 48-52*F. The cooler's ambient temperature was found to be 52*F with both inspector's min/max thermometer and establishment's mercury thermometer. The food items were prepared and placed in the cooler between 4:00 AM and 5:00 AM today. The cooler was last known to be below 41*F ambient temperature at 4:00 AM today. PIC voluntarily discarded the TCS food items. The cooler will not be used to cold hold TCS food items until it is repaired/ replaced and able to maintain an ambient temperature of 41*F or below.
