Observed in use mechanical ware washing machine in kitchen with a chlorine concentration of 0ppm at time of inspection. Person in charge informed when using chlorine as a sanitizer it shall remain between 50-100ppm at all times per manufacturers instructions. Corrective Action: Corrected at time of inspection.

Observed shredded cheese, sliced cheese, ranch and sour cream all at a temperature of 68*F at a time of inspection in furthest reach in cooler in kitchen. Ambient air temperature of reach in cooler at 68*F measured with min max thermometer person in charge informed reach in cooler shall not be used until it can remain at 41*F or below at all times.

Observed a bag of cooked ground beef with no date marking label in the reach in cooler by the dry storage racks. The person in charge stated the food was cooked two days ago and made note to date mark the food. Discussed TCS food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed build up of soils and dark organic matter on the fan inside the refrigerator by the back storage room. The refrigerator also had accumulation of food debris and spoilage on the side walls and bottom shelf. Discussed cleaning frequency to prevent contamination of food.
