Inspector's notes
Observed multiple TCS foods (see embargo order for list) kept in a prep table cold holding unit at 50°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, foods had been kept there overnight. Investigation of the unit revealed the unit itself was kept at a constant temp of 50°F throughout including the reach-in drawers underneath. All TCS foods improperly cold held were discarded by PIC at time of inspection and maintenance was called for the cold-holding unit. Corrective Action: Corrected at time of inspection.

3-501.13 - Core: Thawing Predefined Comment: All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed shredded cheese and thinly sliced pastrami at a temperature of 45-47*F in reach in cooler and prep top on furthest end of cook line. Items were placed in reach in cooler and prep top 2 hours prior to temperatures being taken. All TCS foods improperly cold held were relocated to walk-in cooler to rapidly cool to 41°F at time of inspection. Reach in cooler is unplugged each night and all items are placed in walk in cooler. Reach in cooler at an ambient air temperature of 46*F when temperatures were taken and lowered to 41*F when leaving establishment. Corrective Action: Corrected at time of inspection.
