Inspector's notes

Observed cooked marinara sauce (with tomatoes) measured 126'F in hotholding well unit located to the left of cooktop. PIC stated food item has been out of temperature for longer than 2 hours. Observed cooked lined chicken measured 121'F in large hotholding unit located directly opposite of cooktop. PIC stated food item temperature controlled yet replenished every hour per company policy. Unused cooked lined chicken are discarded at the hour mark, per PIC. Suggested PIC to put item on time as control as it would benefit the restaurant's operations and needs. Time as control policy developed with PIC on-site at time of inspection. All TCS foods improperly hot held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed half and half milk, dairy heavy cream, whole milk and dairy whipped cream (items measured 45-51'F) in small refrigeration unit located on counter on service line. Ambient temperature of unit measured 54.6'F. PIC stated it is unknown when unit malfunctioned and food items have been stored in unit for longer than 4 hours. Establishment observed with more than adequate coldholding capacities. Unit was cleared off TCS food items and PIC agreed to not use unit until it has been fixed/replaced. Observed cheese items (74'F) and individual butter cups (75'F) stored at ambient air temperature on service line. PIC stated food items are not time-controlled but replenished every hour. Suggested time as control policy to PIC as it would be beneficial to establishment's operations and needs. Developed time as control policy on-site and PIC time stamped items at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
