Observed shredded lettuce, sliced tomatoes, turkey deli meat in deli station with an internal temperature of 52-55*F. According to PIC, all food is discarded at end of lunch service, but could not provide written documentation on logs for what the initial temperature of food. Also observed spinach in salad bar with an internal temperature of 56*f. Salad station was not found on temperature logs. Discussed importance of maintaining temperatures of all TCS foods or maintain logs if using time as a control. **Repeat violation**

Observed fridge near line with sour cream and fresh made salsa with ambient temperature of 68*F. Unit did not appear to be on at all. Had PIC move foods to working unit and discontinue use of fridge for any foods until repair is made. A reinspection has not been scheduled. Establishment has adequate refrigeration. Corrective Action: Corrected at time of inspection. 3-501.15 (A) - Priority Foundation: Cooling Methods.
