No sanitizer set up for for equipment and utensils being washed. *The establishment was washing equipment that remained in the center and not sent back to the caterer in a two compartment sink. The establishment did not have anything else set up to sanitize. The PIC set up an additional container at time of inspection to properly sanitize equipment. Ensure that equipment/utensils are exposed to chemical sanitizer for proper length of time according to manufacturer’s directions. Corrective Action: Corrected at time of inspection.

Observed hamburger patties in the hot holding unit ranging from 110*F to 112*F. Ambient temperature of the unit was 107.2*F using min/max thermometer. Per the person in charge, the hamburger patties were delivered from caterer at approximately 9 am, time of inspection was 9:50 am. Corrected at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection.
