Inspector's notes

Observed boneless chicken wings in prep cooler at 60*F. Wings were laying on top of compartments for cold hold in filp top portion of refrigerator. Foods are to remain at or below 41*F during storage. Boneless wings were discarded by person in charge. Observed cut leafy greens at salad bar at 45*F and cottage cheese at 47*F. Cold hold to be 41*F. As per person in charge items were filled less than one hour prior to inspection. Both items were cooled back to 41*F in walk in cooler. Advised person in charge to use time as control for salad bar. Corrective Action: Corrected at time of inspection.

Inspector's notes

Salad bar had the following TCS food measuring an internal temperature of 51-53'F: lettuce, spinach, shredded cheese, chickpeas, cottage cheese, and pepperoni. Per person in charge all food had been placed into salad bar from walk-in cooler approximately 30 minutes prior. Ambient air temperature of cooler measured 55.7'F with min/max thermometer. Establishment will temporarily use time as a control for food in salad bar until cooler can be repaired. Other refrigeration in vicinity if needed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
