Observed diced tomatoes in the cold holding unit next to the grill and stovetop with a temperature of 47*F. Observed milk in the bar cooler next to the kitchen at 50*F. PIC stated the tomatoes and milk were prepped or used the night before and embargoed the tomatoes and milk at the time of inspection (see attached embargo sheet). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below Corrective Action: Corrected at time of inspection.

Observed the drain lines from the soda machine in the service area below the flood rim of the floor drain creating an air break where an air gap is required. Advised PIC to repair all plumbing to a state of good repair prior to next routine inspection. Correct prior to next routine inspection.
