Inspector's notes
Refrigeration unit containing cheeses had internal temperature of 58°F. Cheese measured with internal temperature of 54-60 °F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All items were thrown away at time of inspection. Refrigeration unit was found to be turned off, unit was turned on and cooling to proper temperature. Corrective Action: Corrected at time of inspection.
