Observed mop bucket and brooms blocking access to the hand wash sink and brush and squeegee in the sink in the hand wash sink in the dish pit. PIC moved the mop bucket, brooms, brush, and squeegee out and away from the hand wash sink. Hand wash sinks must be accessible at all times to allow for proper hand washing. Corrective Action: Corrected at time of inspection.

PIC and cook rearranged the raw proteins according to cooking temperature and placed the vegetable lasagna with other ready-to-eat foods. Reviewed food storage and cross-contamination. PIC made adjustments to the food storage chart. Ready to eat foods should be above and separated from other foods that require cooking such as ground beef (155F final cooking temp). Separating different types of raw animal foods from one another during storage, preparation, holding and display will prevent cross-contamination from one to the other. PRIORITY VIOLATION-5-402.13, P: Conveying Sewage >>> Observed the floor sink under the prep sink with standing water that would not drain. The waste line from the water system slowly drains into the floor sink, causing some water to flow onto the floor. Also observed standing water in the floor sink for the ice machine drain line. According to PIC, the floor sink stopped draining the morning of the inspection and a plumber is in-route. A bucket has been placed under the drain line to prevent water from pooling on the floor. The rinse compartment of the 3-compartment sink will be cleaned and sanitized for any food prep, temporarily. Discussed the requirement to close the kitchen if an active backup happens and waste water begins to flow out of the floor sink and onto the floor. Improper disposal of waste provides a potential for contamination of food, utensils, and equipment and, therefore, may cause serious illness or disease outbreaks.
