Maintain cold TCS food in ANSI-accredited equipment. The unapproved walk-in should not be used to store TCS foods and is condemned from such use by this Department. Establishment has failed to follow through with their submitted remodel for the unapproved walk-in cooler (RM-09490).

Observed pan of cooked, diced potatoes/93F being maintained at room temperature. Per staff, the potatoes had been out 15 minutes, and were still within safe time cooling parameters. Proper cooling procedures were reviewed. Staff relocated the potatoes to the refrigerator (bottom shelf) to facilitate the cooling process. Inspector emailed Cooling guidance document. 2nd Consecutive violation. Corrective Action: Corrected at time of inspection.

Swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. All food must be in good condition, safe, and unadulterated.
