Observed cooked and cooled chicken and lengua in small prep cooler next to grill at 45*F. Cold hold of food to be at 41*F or lower. Product was embargoed and discarded. Advised staff to check both hot and cold temperatures of food using a metal stem thermometer. Observed cooked rice in walk in cooler at 50-55*F. Product was embargoed and discarded. As per the person in charge rice was prepared by the night staff and placed in walk in cooler. Corrective Action: Corrected at time of inspection.

Repeat Violation 3-304.14 - Core: Wiping Cloths, Use Limitation Predefined Comment: All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Chlorine based sanitizer to be at 100 ppm and quat ammonia based sanitizer to be between 150 - 400 ppm depending on manufacturer recommendations. Bleach added to wiping cloths for 100ppm reading. In walk-in cooler, a container of chopped ham and container of chopped sausage had a date mark of 1/14. Containers of tacos had date marks of 1/9 and 1/13. Person in charge confirmed that dates for food were correct. As all items were past the 7 day use period they were embargoed. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
