Observed a chemical system at the 3 compartment sink attached to a black hose, attached to an atmospheric vacuum breaker faucet. Talked to manager about plumbing options. Ensure there is no shut offs downstream from the AVB. Corrective Action: Correct prior to re-inspection.

Predefined Comment: All plumbing must be maintained in good repair at all times. Will re-inspect within 3 days.

Observed two containers of meatballs holding at 118*F. PIC stated the last temperature check on product was done in the morning (more than 4 hours prior) Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. See Embargo form. Corrective Action: Corrected at time of inspection.
