Shake mix in shake machine found with internal temperature of 46-50*F; temperatures verified with PIC's and inspector's calibrated probe thermometers. PIC stated the shake mix/machine was last checked and known to have a temperature of 41*F or below at 6:30 AM today. PIC discarded the shake mix. The shake machine will not be used until it has been repaired/replaced and is able to maintain shake mix at a temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below.
