Observed two boxes of breakfast sandwiches on the hand sink in the back kitchen area. Person in charge (PIC) relocated the boxes at time of inspection. Hand sinks need to be easily accessible for hand washing at all times. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed red and green salsas, hard boiled eggs, cut watermelon, deli cheese and shredded cheeses with internal temperatures ranging from 48-59*F on the temporary serve line. PIC stated the foods are placed out at 6:30am and is unsure if any had been restocked. Observed the containers of foods stored in insulated containers or atop several inches above ice. Discussed proper ice bath setup. Discussed that insulated containers should be removed from the freezer and to be filled with TCS foods immediately before service to keep foods at 41*F or below. Observed the containers stored with foods inside the refrigerator. All TCS foods improperly cold held were discarded by PIC at time of inspection due to service being completed for the day (see embargo). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

A pattern of non-compliance is developing for Priority violation #37, 3-306.11, which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Line is not actively monitored at all times. The facilities manager indicated that a new sneeze guard unit was on order. The facility will need to cover all food products with lids until the new sneeze guard unit is provided.
