Observed cooked white rice, cooked pork, and cooked steak all being stored measuring internally between 80-100 degrees F. Per PIC, the rice is desired at room temperature for sushi and the meats are re-heated when needed for an order. PIC stated that these items are used before a 4 hour window or they are discarded.
