Inspector's notes

Observed multiple Time/Temperature Control for Safety (TCS) food items including various sliced deli meats, cooked and diced chicken breast, and cut tomatoes located in a reach-in refrigerator near the sandwich station registering internal temperature ranging between 47°F-72°F. All TCS food items were date-marked as prepared the day prior to inspection (02/19/2025). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Upon further inspection, the refrigerator unit was observed to be holding at 50°F. The manager voluntarily discarded the TCS food items at the time of inspection and placed Out of Order signage on the unit. The establishment has ample refrigeration to continue operating. Corrective Action: Corrected at time of inspection.

Observed multiple holes in the walls of the establishment including underneath the hand sink in the men's restroom and a missing socket cover near the breakfast station. The establishment shall cover/repair any holes in the walls to produce a smooth, easily cleanable surface and to prevent the harborage of pests. Corrective Action: Correct prior to next routine inspection.

Repeat Violation Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained * Provide an ASSE 1013 reduced pressure zone assembly for the following items: -Carbonated beverage systems. RP must be installed upstream of carbonators located under the soda island. All piping downstream of RP must be pex or plastic. RP must have drain cup that has a rigid drain to floor sink with 1 inch air gap above floor. -RO system on ElectroLux Combi. RP must be installed upstream of the RO system. All piping downstream of RP must be pex or plastic. RP must have drain cup that has a rigid drain to floor sink with 1 inch air gap above floor. -Non filtered water line for ElectroLux Combi.
