Food processor, class 4 OC re-inspection was conducted with the owner, Sara and interpreter, Israel R. The hot holding box for the business has been provided. The owner also obtained a generator for the hot box to maintain temperature during service. Permit is approved. Please address the following items prior to the routine inspection:1. Repair /replace the hot water valve at the food prep sink in the large ware washing room.2. Repair/ replace the hot water valve at the hand sink inside the prep room.3. The establishment is not open and operating.The establishment will be making tamales, bag and label the bag, maintain the food hot and sell them on the street for 2 hours. Discuss types of vehicles approved for transportation of food. Per owner, they have a SUV. Owner is not a certified food protection manager. Please obtain and maintain on site for inspection purpose. Staff must have food handler certifications.Permit is not approved.Please address all items before the re-inspection:1. Repair/ replace the area above the walk-thought at the produce prep area. There is organic matter on the surface and shows sign of water damaged.2. Provide transportation vehicle, transportation containers, labels for the products and type of bag that will be used. Label must have name of business, address of production site, ingredient list from largest quantity to smallest, common names only and allergen contain in the product.3. Provide hard plastic liner on the back of the SUV.4. Provide samples of labels for the tamales.5. Provide dedicated area of dry, cold and freezer space for the establishment.
