TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Observed multiple containers of dairy butter placed on counter at room temperature at 68'F near the prep cooler closest to the bar. Dairy butter containers had appropriate time stamps but establishment did not have proper documentation for TPHC. A policy was created for item using TPHC with PIC. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.

Observed a bottle stored in ice bin used for customer drinks at the bar area used at the time of inspection. Containers storing bottles inside the ice bin were observed to be wired and in contact with the ice. Also observed a bottle stored in the ice machine in the bar area. PIC was informed that ice used as an exterior coolant may not be used as an ingredient in any food/drinks and to obtain solid surface containers. Bottles were removed by PIC from the ice. Corrective Action: Corrected at time of inspection.

To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so.
