Manager on duty stated cut tomatoes by company policy are Double plastic panned with holes in the first pan to drain water. Discussed keeping all TCS food items not double panned to ensure 41*f degrees and below. Per manager all items out of temp less than 4 hours. Corrective Action: Corrected at time of inspection.
