New permit inspection for Jon Jon's BBQ.This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection.When conducting catering operations make sure the following items are in order:1). You have a hand wash set up ready, warm water and soap and paper towels.2). If outside catering occurs you will have to make proper calls on whether to serve food or not in relationship to the weather.3). To accommodate outdoor food service you will need to be ready to provide overhead protection depending on location (trees), sides to the canopy and floor covering.4). Make sure to provide lighting if serving after or before sunset/rise.Note that all food must to be prepared in the church kitchen, then transported to the event location where it can be served out.The only exception to this rule is that you are allowed to cook off meats on a grill under the condition that marinating and portioning etc. has been conducted in the source kitchen.Note that catering is defined by law as a food establishment where a pre-arranged number of meals and/or food products are prepared at one permitted premise for immediate service and consumption at another pre-arranged location. In general, there are no individual monetary transactions at the serving site with the exception of County Registered Farmers Markets and Special Events after registering with the event coordinator. Normal locations for operation are weddings, parties, events like farmers markets, auto shows, spring training etc. Sales to public outside these parameters is strictly prohibited.When conducting the approved outdoor smoking/cooking setup this operation is restricted to the following criteria: 1) Limited to the cooking/grilling of proteins. Also at the events. Food preparation of proteins and food items for service shall be done indoors. 2) Hot holding and cold holding outdoors is limited to approved menu items by approved methods. 3) No cutting, portioning or other preparation is allowed outdoors and shall be done inside the support kitchen. Smoked meat excepted.4) The outdoor food operation area is a limited extension of your support kitchen outside, and the same regulations that apply indoors are applicable at the outdoor cooking area. Follow the same regulations for health code compliance outdoors that are you are required to follow indoors.5). Outdoor cooking is only allowed in good weather conditions and when contamination of food cannot take place. If for some reason the safety of the food is at risk the operations is required to cease immediately. In case of inclement weather you will need to use the ovens inside to roast the meats. Non event smoking of meats has to be conducted at the church in the parking lot.6). Please note that prepped out food items left over after catering or other events may not be brought back to the source kitchen for carryover.This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Note that fees paid up to this inspection approval did not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2.
