Observed right tabletop cooler cold holding cooked potatoes, cooked corn, boiled eggs and egg yolks, raw fish, cooked carrots, cooked mussels, and cooked sweet potato batter at 49*F-54*F. Ambient air temperature of unit was at a minimum of 45*F. Per person-in-charge (PIC), food items were placed in unit approximately two hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC stated unit will not be used to hold TCS food items until repairs can be made. Corrective Action: Corrected at time of inspection.

Observed right tabletop cooler with an ambient air temperature at a minimum of 45*F. PIC removed all TCS food items from unit at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC stated unit will not be used to hold TCS food items until repairs can be made. Per PIC, repairs to unit will be made today. Establishment observed to have adequate refrigeration.
