Observed in use egg tephlon sheets and plastic containers over 4 hours past time designated to be washed. Plastic containers and lids, in sanitize compartment past 4 hour window. Person in charge placed all items in 3 compartment sink for washing. 4-602.11 (E) - Core: Equipment Food - Contact Surfaces and Utensils-Frequency; Non-TCS. Observed cook handling raw beef, touch all buttons on cooked holding station, and employee handling cooked food touch same buttons without wiping area down with a sanitize cloth. Employee handling cooked food immediately wipe are with sanitized cloth, removed gloves, washed hands and placed new gloves before returning to station.
