Observed ice build-up on walk-in cooler compressor. Observed ice build up under metal flooring in the walk-in freezer. Ice build up is accumulating to such an extent that the flooring is raising and bending. Discussed ensuring that the unit is serviced and the ice build-up is managed in order to prevent any further damage to the unit. Physical facility must be maintained in good repair at all times. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed raw shelled eggs and boxed liquid eggs stored above uncut produce. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed a build up of orange organic matter in the back scaffolding of the ice machine. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Observed the metal paneling of the floors in the walk-in freezer being lifted up and bent by ice trapped underneath. Discussed repairing and maintaining the freezer floors in good repair to ensure the functionality and cooling capacity of the freezer. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Due to there being no CFPM at time of inspection and multiple priority and priority foundation violations there is a lack of active managerial control at the establishment. This is the 4th repeat for a CFPM. A purchase receipt of a CFPM class that is ANSI certified and registered to one of the staff onsite will be required for this violation to be corrected.
