Observed cooked chicken and raw beef at temperatures ranging from 46-50 degrees F. Per PIC items had been prepared and thawed less than 4 hours prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. >>> In large steam table, across from cookline, observed various containers of TCS (time/temperature controlled for safety) foods such as cooked beef, cooked chicken, cooked pork, cooked rice, black beans, queso and tomatillo sauces with internal temperatures between 100*-134*F. Portions of some of the TCS foods had temperatures greater than 135*F. Temperatures verified with establishment probe thermometer. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Per Person in Charge (PIC) TCS foods were placed in steam table at 11:00am (less than 2 hours prior). PIC reheated TCS foods on stove to 165*F or above and adjusted steam table temperatures.
