Observed half and half creamer held at room temperature on pick up window without documented time of placement or time for discard. PIC reported creamer is changed every two hours from time of open. Creamer being held under time as a control was properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.

Person in charge indicated they started brewing the cold brew 2 hours before inspection. The cold brew was moved to the refrigerator. Person in charge was informed that cold brew must be brewed, held, and dispensed at 41*F and below and only held for 7 days (day 1 being the day it was brewed); if the establishment would like to deviate from these procedures they must acquire a variance with Maricopa County Environmental Services.
