Observed two raw shell eggs that were on a shelf near the baking area that were room temperature. Person in charge (PIC) said they had been left out from early. Person in charge (PIC) was not sure how long they are out of temperature and decided to discard the eggs. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Also observed cooling sesame and mung bean balls measuring 64*F internally that had been cooling for approximately 1 hour per PIC in containers 10 inches high and tightly wrapped in plastic. Ensure cooling from 135*F to 70*F is done in no more than two hours, and to 41*F or below in no more than four more hours.
