Inspector's notes

Observed cooked refried beans with an internal temperature of 108F located in a steam table near the stove. Per PIC, the refried beans have been hot held for less than 2 hours prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked sausage with an internal temperature range of 77F-82F located in a pan under the flat top grill. Per PIC, the sausage is normally in the prep table and is reheated on the flat top when an order comes in. The sausage has been out for less than 2 hours prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed cooked potatoes in a pan under the cook top, and in a bowl on top of the prep table between 85 and 110 degrees Fahrenheit at the time of inspection. Kitchen manager moved both onto cook top to reheat at the time of inspection. Discussed keeping bowl/pan on the cook top to maintain heat without potatoes getting overcooked. Foods holding hot shall be at least 135 degrees Fahrenheit to prevent microbial growth. Corrective Action: Corrected at time of inspection.
