Inspector's notes
Observed an employee place dirty dishes in the mechanical dishwasher, rinse gloves off with the spray hose, then handle a clean container to put away without removing their gloves and washing their hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed multiple cooler gaskets in disrepair with large portions ripped all the way through. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Discussed in-tact gaskets may help coolers function better. Corrective Action: Correct prior to next routine inspection.
