Sanitizer containers all had a quat concentration below the required 200-400ppm. PIC noticed that the sanitizer bag feeding the dispenser was empty and they changed it, then remade all sanitizer containers. Please ensure that quat solution reads between 200-400ppm to guarantee proper sanitization of food contact surfaces. Corrective Action: Corrected at time of inspection.

Sausage observed with an internal temperature of 72*F while being cooled in walk-in cooler inside a containers with lid tightly closed. The sausage was within proper cooling parameters. Lids was left ajar to facilitate rapid cooling. Discussed the importance of air circulation during the cooling process. Corrective Action: Corrected at time of inspection.

The same brown ice was observed inside the ice compartment of the drive thru soda machine. Per PIC, a work order was submitted a day prior to this inspection to have ice machine serviced. There was evidence that the ice had been used. PIC stated that they have been telling drive thru customers that they had no ice. PIC voluntarily advised employee to pour hot water and sanitizer inside the drive thru ice bin to melt the ice. Advised PIC to drain and put an out of order sign on the main ice machine. An out of order sign was placed on the main ice bin and door was taped shut. Per PIC, the plan is to buy ice after the lunch rush. Explained how ice is considered food and should not be used when deemed Unsafe, Adulterated, or Contaminated. Correct By: Corrected At Time Of Inspection
