Observed chicken (47*F), carne Asada (46*F) and cabeza (50*F) in sandwich prep cooler at temperatures greater than 41*F. As per the person in charge the chicken had been in unit over night, the asada was cooked and cooled today, and the cabeza was removed from the walk in cooler this morning at opening. All items were embargoed and discarded at time of the inspection. Advised person in charge to monitor cold hold temperatures throughout the day using a metal stem thermometer. Observed salsas at self service bar at 45*F. Observed ice used to keep product cool was not in contacted with salsa containers. Suggested facility use time as control for monitoring cold hold temperatures at salsa bar. Ice was added to cool product back to 41*F Corrective Action: Corrected at time of inspection.
