Observed a concentration of 0 PPM chlorine sanitizer being dispensed from mechanical dishwasher unit located in the ware-washing area. PIC put in a work order to have the unit serviced at time of inspection. PIC will discontinue use of the dishwasher and set up the 3-comp sink to ensure the wash, rinse, and sanitize process continues as required. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed Chemical dishwasher with empty sanitizer bucket. Dish surface droplets were tested with zero detectable chlorine. PIC immediately replaced ware washer sanitizer bucket, and the dishes were re-washed after priming the sanitizer line. Dish surface droplets tested at 50ppm chlorine. Discussion was held with PIC about being diligent in testing chemical levels and training dishwash employees to test with greater frequency. Corrective Action: Corrected at time of inspection.

Employee stated that the onions and bell peppers were cooked 1 hour prior and were cooling to be used during lunch service. Predefined Comment: Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Cooked onions and cooked bell peppers were immediately relocated to the top rack of the freezer for rapid cooling. 70 degrees was reached within two hours and the foods were relocated to the walk-in cooler. Discussion was held with the PIC and employee about proper cooling methods to avoid lingering time in the danger zone. Corrective Action: Corrected at time of inspection.

TCS food items prepared onsite and reheated for hot holding must be rapidly reheated to 165°F within 2 hours prior to hot holding. Suggested PIC to use stovetop or oven to reheat food items for hotholding. Corrective Action: Corrected at time of inspection.
