Discussed ice is an option to be used as an ingredient in lieu of water. 2) storage of utensils shall be in clean dry location and not between equipment. 3) Observed establishment with an Eating & Drinking (E&D) Class 3 permit cooking and cooling items such as grilled chicken, beef sausage, spaghetti, penne pasta and fettucine pasta. Advanced prepping and cooling require an E&D Class 4 permit. Establishment is operating as an E&D Class 4 permit. PIC stated they will discontinue cooking and cooling the spaghetti, penne pasta and fettucine pasta and will maintain work within the Eating & Drinking (E&D) Class 3 permit. Observed on a shelf above single use containers and lids to Tums, throat lozenges, MCT oil and employees personal drinks. Discussed with PIC all employee medicine and personal drinks shall be stored low and in a way that prevents contamination of foods, food contact surfaces, linens and single use items. PIC relocated the medicine and drinks at the time of inspection. Corrective Action: Corrected at time of inspection.
