Observed containers of diced tomatoes, chopped greens, mixed cooked meats, french toast batter, grilled chicken, chopped peppers and onions, with dates past 7 days the date prepared. All prepared temperature-controlled foods should be discarded after 7 days. Person in charge had staff discard items. Lettuce in thick plastic container with lid in lettuce cold holding unit at 46-50*F. Person in charge stated food was prepared within one hour of inspection and removed item and placed in walk-in for proper cooling. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Ice scoop holder/bin observed with debris inside while ice scoop was stored inside of it. PIC took the scoop and holder to the dish room where both items were washed rinsed and sanitized. PRIORITY VIOLATION-4-703.11, P: Hot Water and Chemical-Methods; Sanitizing Food-Contact Surfaces. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4574/AMC-Toolbox---Food-Contact-Surfaces. ------ High temperature dishwasher observed at 155*F final rinse temperature after several runs. Dishes were being actively washed at time of inspection. High temperature records showed that the dish machine did not reach 160*F or higher earlier in the day. The dish machine can be switched to a low temp chemical dishwasher. Person in charge submitted a work order and the dishwasher was switched to low temp chemical sanitization with proper concentration of chlorine (between 50-100ppm). Please ensure that the final rinse temperature is 160*F or above when using high temperature to sanitize dishes. Correct By: Corrected At Time Of Inspection
