Ambient temperature of unit taken with min/max thermometer registered at 48*F in the kitchen and 44*F in the back walk-in. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Correct prior to re-inspection on 8/24/24. A permit holder shall immediately discontinue operations and notify the regulatory authority if an imminent health hazard may exist because of an emergency such as a fire, flood, extended interruption of electrical or water service, sewage backup, misuse of poisonous or toxic materials, onset of an apparent foodborne illness outbreak, gross insanitary occurrence or condition, or other circumstance that may endanger public health. Observed a walk-in unit with warm ambient temperature holding TCS food items. Ambient temperature of unit taken min/max thermometer registered at 48*F. TCS food items included tarter sauce, shredded cheeses, cut lettuce, deli salads, cooked chili, cooked beans, raw chicken and cooked roast beef. Internal temperature of TCS food items taken with internal probe thermometer, registered at 46-51*F. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
