Queso cheese mixed with whipped cream and half and half the day before with a date label of 4/24/25 has an internal temperature of 50 degrees F in walk in cooler. Food is cooling in a deep bucket about 20 inchess. For rapid cooling use containers with 4 inches height or if cooling in deep buckets use ice stick stir and when reach to 41 Degrees cover it. Food item was discarded. Corrected at the time of inspection.
