For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding. --- Observed beef hamburgers and BBQ rib sandwiches in reach-in hot-holding unit by the soda machine; measured temperature at 120-128'F. All hot-held TCS food items must be held at 135'F or above. Items in question were prepped at 1:00pm, per PIC. PIC was informed the items could be reheated to 165'F as the items have not been out of temperature for longer than 2 hours. All hot-held TCS food items must not be out of temperature for longer than 2 hours. PIC declined to reheat and discarded the items voluntarily at 2:45pm per store policy regarding food safety. Hot holding unit was observed to be set at 125'F. PIC set unit to 135'F and hot holding unit was measured 135.2'F at time of inspection. Concluded unit in question is capable of supporting hot holding temperature of 135'F or above. PIC contacted manager via phone call and was instructed by manager to have unit turned off until manager arrives next day. PIC turned off unit at time of inspection.
