Repeat Violation Observed flavored milk, cold foam, and whipped cream stored at room temperature on holding rack, hanging off counter near espresso machine with internal temperatures ranging 50-58*F. Person in charge stated items were placed on rack within 2 hours prior to inspection and placed in freezer for quick cooling. Items reached an internal temperature of 48-55*F and going down by end of inspection. Keep TCS foods in cold holding at 41F or below. SECOND CONSECUTIVE VIOLATION PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Person in charge stated cold brew was brewed and placed hot in unit within 3 hours of inspection. Hot temperature controlled foods should be cooled in walk-in refrigerator and reach 70*F within 2 hours from 135*F and then 41*F within 4hours from 70*F, for a total of 6hours.
