Inspector's notes

Observed various TCS food items such as pico de gallo, cooked beef, and cooked chicken with internal temperatures between 47°F to 50°F in prep cooler closest to hot holding units. Ambient air temperature of cooler measured 51°F. Per manager items had been prepared and placed in unit about 1-2 hours prior. Discussed regularly checking ambient air temperatures of cold holding units. Manager had staff place items on ice, moved to properly working cooler and called to have unit serviced. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
