In undercounter cabinet in front service area, observed 7 chemical spray bottles stored on same shelf and adjacent to boxes of food handler gloves. In the back prep room, observed a spray bottle of no rinse cleaner stored with clean food packaging materials. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Inspector's notes

Observed multiple trays of deli-sliced ham, turkey, and various semi-soft cheeses at temperatures measured by probe thermometers between 44°F and 49°F at main deli prep table. Per PIC, only one tray of deli-sliced meat was placed in prep table less than four hours prior (1 hour). All others had been placed in prep table more than four hours prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods were either disposed of (if held longer than four hours) or placed into walk-in to rapidly cool (see embargo form). Corrective Action: Corrected at time of inspection. *2nd Violation*

Employee working the sandwich counter explained that all of the products in the cold holding table had just been taken out of the walk-in cooler less than 2 hours before. Advised the person in charge to remove all products from the cold-holding table and reach in and move then to the prep station behind the sandwich counter that was not being used at the moment. After product was moved temperatures dropped and held below 41*F. Informed person in charge not to use the cold holding unit until it is working properly and holding a temperature of 41*F or lower.>>> Correct By: Corrected At Time Of Inspection
