Observed cookline low side reach-in fridge holding Mexican rice, white rice, popcorn chicken, pork, liquid egg, green salsa, and veggie stock 48-52*f degrees. Observed the following items on the prep line open top cold tables either double panned or overfilled, cut lettuce, cubed tomatoes, sliced tomatoes, black beans, quinoa, and ranch 45-62*f degrees. Per kitchen manager all items had been out of temperature less than 4 hours. Corrective Action: Corrected at time of inspection.

Hummas, Taziki, Cut tomato in balsamic sauce, roasted pepper and kim chi in reach in cooler in the corner of cook line are using time for food safety control but are not time tagged and there is no policy for using time for control. Manager stated the unit was repaired today but still needs another part. Therefore all food was covered with ice except this five items. Manager also stated this will be temporarily situation for short time and wrote the proper policy and procedure; also, time tagged food items for 4 hours.
