Observed at time of inspection hot holding chicken gravy at 102*F-106*F. Per sticker chicken gravy was prepared at 11am. Time of inspection is after 3:30pm. Notified Person In Charge (PIC). PIC confirmed internal temperatures. Unit was not powered on. Directed PIC to discard. Also observed inside hot holding tray area one large piece of cooked chicken at 106*F. No time on unit was observed Notified PIC. PIC confirmed temperature and discarded cooked chicken====•Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Corrective Action: Corrected at time of inspection.
