PRIORITY VIOLATION-3-403.11, P: Reheating for Hot Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4618/AMC-Toolbox---Reheating. Observed taquito's in the hot holding rollers with internal temperatures between 116-125*F. PIC stated the food had been placed on the rollers 30 minutes to 1 hour prior. Time/temperature control for safety food should be reheated to 165*F, then the food can hot hold at 135*F to prevent the growth of pathogens. PIC moved the taquito's to the back of the unit to continue reheating the taquito's and increased the temperature of the unit. When inspector rechecked the food, the temperature had gone up to 138*F.
