Observed stained and scratched prep cutting board. Discussed resurfacing or replacing cutting boards to ensure a smooth and easily cleanable surface. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times.
